Ginger Beer
Ingredients For Starter (a.k.a., Bug) ~20 g ginger, grated ~20 g sugar 2 C filtered water For Drink 2 Q filtered water 275 g sugar 54 g ginger, grated 110 g strained starter liquid Process For Starter Combine all ingredients into clean mason jar. Cover with cheese cloth. Every 24 hours, filter out previous day’s ginger with a fine mesh strainer and add new ginger and sugar. Add water as necessary to maitain ~2 C.

- ~20 g ginger, grated

- 2 C filtered water
For Drink
- 2 Q filtered water
- 275 g sugar
- 54 g ginger, grated
- 110 g strained starter liquid
Process
For Starter
- Combine all ingredients into clean mason jar. Cover with cheese cloth.
- Every 24 hours, filter out previous day’s ginger with a fine mesh strainer and add new ginger and sugar. Add water as necessary to maitain ~2 C.
- Store in refrigerator if starter can’t/won’t be fed for more than a day.
For Drink
- Combine water, sugar, and grated ginger in stock pot, bring to a boil then reduce to simmer for 5 - 8 minutes. Let cool to room temperature.
- Strain through fine mesh strainer. Press out juices.
- Add 1/2-to-1 C strained starter.
- Pour in to sealable - preferably plastic - bottles.
- Let sit at room temperature until bottles are proper carbonation.
- Place in fridge, cool, and enjoy.
